The Sweet, Sweet Potato...

The chosen ingredient for this week was the sweet potato, and while not one of my favorite ingredients, this was all the more reason to choose this, because after creating several different desserts, I'm becoming to actually enjoy sweet potatoes more and, for our first dessert, we wanted to try cheesecakes.  We decided to try cheesecakes because most that we've spoken to, tend to turn up their noses at pumpkin cheesecakes, and yes there is a difference in taste, but I'm now also noticing the textural difference as well.  While the pumpkin cheesecake is more dense and obviously not as sweet, the sweet potato is far creamier and when paired with cream cheese, it makes a really wonderful combination.

Our next sweet potato dessert to try was the sweet potato Bundt cake, with a beautiful cinnamon and brown sugar streusel ribbon.  What an awesome combination!  My usual holiday Bundt cake would be pumpkin, but this cake is very moist and sweet potatoey...if that were actually a word!  We decided to make a browned butter, brown sugar and rum glaze to drizzle over the top and WOW, this is definitely a keeper!!

Finally, with remaining mashed sweet potato, we just had to make a few sweet potato pies, and these were just beautiful, definitely delicious and most of all (with a teen aged boy and significant other who both love sweet potatoes) they were just...GONE!
